If I had to guess, I would say they were testing a rig for testing parachutes. The pig would die if the acceleration was too much, meaning it would be unsafe for human subjects. The parachute was so the pig would survive landing, because otherwise, you wouldn't know if the launch or landing killed it. But that's just my guess.
