There are color light-receiving "cones" inside of our eyes. By focusing on the +, we keep the purple dots in one location. The receiver cones "burn out" and we lose the ability to see purple in those specific areas.

The other cones are still active, giving a negative afterimage if the purple color were to suddenly dissappear. This afterimage is a green color.
